Latvian restaurant group provides catering for the prestigious Cambridge University's 'May Ball'

This year, the Latvian restaurant group "Resto-Rātors" was one of the caterers at the prestigious "May Ball", the end-of-year celebration at Cambridge University, delighting 400 guests with "Nori Line" - a new culinary concept that has received positive recognition worldwide. The restaurant's participation in such a significant event is considered a major achievement, and the university has also issued a letter of thanks for the high quality and invited them to cater again in 2025.

"Representatives from Cambridge University had tasted our "Nori Line", and the concept made such a good impression that we were invited to prepare it for the ball’s guests at Gonville and Caius College. Considering there were around 400 guests at the event, we prepared 1,600 "Nori Line" servings, and I am pleased to say that we were the most sought-after caterers at the event. This was the second year we were invited to serve this dish, and our collaboration with the university will continue next year," says the concept's creator and "Resto-Rātors" founder, Viktors Ravdive.

"We are delighted that the work of Latvian restaurants is being appreciated at events of this scale. It once again proves that our restaurant offerings are not only of high quality but also modern and innovative," adds V. Ravdive.

"Nori Line" is a new culinary innovation - an original and distinctive concept that significantly redefines the traditional street-food offering. The concept is based on a crispy nori shell, a creative departure from the conventional nori taco presentation. This is achieved through a specially developed frying and drying method for the nori shell, served with unique ingredients and sauces.

The Cambridge University college "May Ball" is considered the most important event of the year - it is organized after exams to celebrate the end of the academic year. Cambridge University has been celebrating this ball since 1866, except for 2020 and 2021, when it was cancelled due to pandemic restrictions.

Founded in 1209, Cambridge University is the third-oldest university in the world that has operated continuously. Gonville and Caius College is the fourth oldest of Cambridge University’s 31 colleges, founded in 1348 by Edmund Gonville. Fifteen Nobel Prize laureates, including Sir James Chadwick, the physicist who discovered the neutron, have studied at Gonville and Caius College.

The unique "Nori Line" concept is rapidly gaining popularity beyond Latvia, with its creator, Viktors Ravdive, having patented the brand in several countries, including China and the United Kingdom. "Nori Line" is also available for tasting in Latvia.
